I know this is not the best picture in the world. I took it with my phone intending to send it to one person and that was it lol. Anyway its called Pav Bahji.

Servings: 4
Cost: $1.17 per serving (Its filling)
By popular request here is the recipe:
3 med potatoes peeled and chopped into large pieces (like 6 pcs per potato)
1/3 red onion chopped
2tbsp Pav Bahji Masala (You have to get this from an Indian Market costs like $2)
1/2 can of diced tomatoes
1 1/2 cups of cauliflower florets (I used frozen)
I carrot peeled and 1/10 inch cuts roughly
1 cup of broth from the vegetables
6 Hamburger Buns
- Cut up all your veggies and peel them.
- Place the potatoes cauliflower and carrots in a large pot (10qt).
- Fill water to cover all the veggies in the pot. Bring to a boil over high heat and cook for 30 min once boiling covered.
- When the timer is to about 20 min get out a skillet and saute the onions in butter until transparent.
- The veggies should be tender.
- If veggies are tender strain the veggies but reserve a cup of the broth from cooking the veggies. If you do not have that much left just fill the rest with water.
- Mash the veggies with a potato masher or a fork or something if you don't have one. It doesn't have to be a homogeneous blend some chunks are ok.
- Add the can of tomatoes (half can) and the onion from the skillet and add the pav bahji masala.
- Add the reserved cup of broth
- Cook on medium for 10 min stirring often
- Reduce to low once the timer is up.
- Use the same skillet from before and add butter set the heat to med-high. Once the butter is melted add one of the hamburger buns inside down and cook until golden brown. Repeat this with as many buns as needed.
*You can salt as you would like and add pepper spices to make it as spicy as desired.
